    Again, I don't drive so I really wanted to challenge myself with a) not relying on others to drive me places, and b) actually moving my body more and enjoying the outside again. This week was a difficult one to choose because of all the rain lol. But it was fulfilling nonetheless. I walked around to and from my doctors appointments and that was really nice! It also gave me time to reflect. I truly love the positive power that walking can have on someone's mental health:-)

      I also don't drive and the pandemic has forced me to get to places a little differently. I stopped using the streetcar and max when my destinations were within walking distance and found that it was nice to just get outside and move. Sometimes I even beat the streetcar. I used to uber/lyft with friends but have stopped since a) das expensive and b) covid.  I agree, walking gives me time to reflect and just take in my surroundings instead of being cooped up in an apartment all day. Definitely a great thing to do for mental health! Thanks for sharing!

    This was pretty nice as I don't drive. However, I do use Uber/Lyft from time to time, and I have been wanting to cut back more lately. I am not opposed to public transportation at all as well having grown up in Portland. However, after everything that has happened in the world, I have been reluctant to be as frequent as I could be for my own convenience. With that in mind, this week was a good one for me and public transportation!

    This week was fun as I had a night with my friends discussion my eco change project about Perfumes, lotions, and candles and why/how I wanted to make them sustainable. We are all on board to have another night together to make some natural perfumes and candles. But this was fun to talk about with them and we also made a vegan meal together as well!

    I connected with a Non-profit called The Cupcake Girls! This is an organization that provides support to people who were victims of sex trifficking, and who are sex workers. They help people feel safe, heard, and offer resources that they wouldn't otherwise have. I am so thankful for the opportunity to work with them for fundraising! I bake, so I was able to make edible (weed) cupcakes, and 60% of the proceeds went towards their goal! I loved this experience and I recommend it to others who are interested in volunteering and/or donating to their cause. They can be found on instagram @cupcakegirlsorg :-)

      What a fantastic way to use your skills to help others! Reducing inequalities is fundamental to sustainability. I like that you could do something like baking to raise awareness and help others.

    This was very odd but needed. I moved recently within the year and this was long overdue. I am glad that we got to talk as I discovered that my neighbors also contribute to the community, one by being a teacher, and the other by being a handyman. To be fair, we moved during the thick of the pandemic. However, what was interesting to note is that although I am glad to have met them, my new neighbors aren't reflective of what the demographic used to be in the area that I live in currently. Overall, I am glad to expand my community.

    Another late post, but I liked doing this last time with the restaurants. Instead I did it with markets instead and I found that I found a lot of cool niche things by instead looking at local places instead. Plus, everyone was so nice when I would go into their stores and tell me the story behind why they were doing what they were doing. In particular, I went to a metaphysical store that sold handmade journals with recycled paper and I loved it as someone who journals a lot! I purchased one in support and I absolutely loved it, as well as the atmosphere.

    This is a delayed response but I did this a few weeks ago. It was nice as I was able to do it with my boyfriend, which offered a lot of the communal support. I will be honest, at times I did forget that I was doing this challenge but when I would remember, I would try to get the trash out and to the recycling lol. Overall, a great challenge.

    This was honestly a great experience for a foodie like me. I was able to try a few new places this week like Mumbo Gumbo (Black/Soul Food), Yala (Mediterranean), LoveVerona (Pizzaria; my personal favorite), and a few food carts in the Multnomah French Quarter (I forgot the names, but I got a local vegan food cart and my boyfriend tried the french food cart! They were both amazing). By the way, I was able to make all my food either vegan or vegetarian, as I am a vegetarian. I hope you all at least give one of these places a try!

    Hello, 
    This week my challenge was to incorporate more vegan meals. Although I am a vegetarian, I believe that the vegan diet is better for the environment, your health, and overall experience on earth. With that in mind, I wanted to add more vegan foods into my diet and I was pleased. It wasn't hard mostly because a lot of foods in my home (like most) was vegan. Instead of adding egg or cheese to my meals, I kept it simple with plant protein and veggies. Had a grand ole time with it. 
    Anyways, moving forward I want to continue to have more vegan dishes intentionally incorporated into my week because I enjoyed it, and it was easy to do when I planned for it.

      This is an awesome and simple way to start change in our lives. I think that everyone could benefit from implementing small changes like this. I'd love to know some of your dishes, I'm a rather picky eater and need to expand my tastebuds!
