Elliot Stevenson 5/03/2021 8:32 AMThis past week with the transportation section was a bit hard for me to change habits much. As. I mentioned in our meeting, living outside of the city leaves very limited options. It was interesting to discuss the possibilities and other options, yet unfortunately, none of them are really viable for where I reside. -
Elliot Stevenson 4/27/2021 9:18 AMThis week was interesting as when it comes to making large impacts on one's water usage it is easier to make the biggest impact by removing meat from your day-to-day life. As such I focused more of last weeks goals to make that happen as well as this weeks again. -
Elliot Stevenson 4/19/2021 9:21 AMThis week after our conversations about food sustainability I selected a few goals to complete. One of the ones that I felt could be most impactful was committing to eating less meat, including a few meatless meals this week. Frequently I will cook some meals that don't have meat in them, yet I will then add a protein to them which is frequently chicken. Chicken isn't as bad as some others yet it's still meat. This week I tried to minimize the amount of chicken I added to meals. Instead, I looked at other sources of protein to use, such as nuts and spinach, and added those in other places. Another action I attempted to do and will do when it gets warmer is visit local farms. Right now I am in Vermont and we had some snow a few days ago, so there isn't much in terms of fresh local produce just yet, I know there is a farmers market in the summer that I plan to use.
