Fernie Diop 3/16/2021 10:44 AMOne of my goals was to recycle everything I could which is a habit I normally do, but I found that now I pay more attention to making sure that everything I put in the recycling can be recycled. In the past I have noticed that certain materials weren't recyclable, but since it wasn't plastic or compost my roommate and I would put it into the recycling. Recently, I have been changing this habit -
Fernie Diop 3/16/2021 10:41 AMI have bought my first car within the past couple of months, but I realized that it hasn't stopped me from continuing to walk to places near my house. In a way, I prefer using it when I have to travel further distances because I enjoy the act of walking. I like it because I'm more physical and it allows me to have a different change of scenery. -
Fernie Diop 3/12/2021 3:18 PMI wanted to share the quinoa recipe!
- 2 cups cooked quinoa (1 cup dry quinoa makes 2 cups cooked)
- 1/4 cup extra virgin olive oil
- 1 teaspoon ground cumin
- 1 clove garlic, finely chopped
- Juice of one lime
- 1 teaspoon fine sea salt
- 1/4 teaspoon cayenne pepper
- 1 15-ounce can black beans, rinsed and drained well
- 1 red bell pepper, quarter inch chopped (about 1 cup)
- 6 green onions, root removed, white and part of the greens chopped (about 1 cup)
- 1 handful of cilantro, rough chopped (about 1/3 cup)
- Make quinoa - 1 cup of dry quinoa, add 2 cups of water and let boil, once boiled - cover quinoa and simmer for 15 mins until water is evaporated, take off heat and let sit for 5 mins then fluff with a fork
- While the quinoa is cooking, whisk the olive oil, cumin, garlic, lime, salt and cayenne together in the bottom of a large bowl - let sit so the flavors can marinade
- Rinse and drain the black beans, then chop the veggies - try to make them the same size as the beans
- Add the cooked quinoa, beans and veggies to the bowl and gently fold it all together with the dressing. Let it chill in the refrigerator at least 30 minutes so the flavors can marinade and then EAT

Fernie Diop 3/12/2021 3:09 PMIt is the small meaningful interactions I've had with people in the grocery store which includes physically helping others, but people give me recommendations of new products to try out or we bond over liking the same products. It's really nice since we are primarily isolated from others

Fernie Diop 3/05/2021 8:33 PMI've realized that I don't waste as much as I thought I did especially considering I'm primarily in the house. I think that I have adopted a better waste management system that works for both me and my roommate! Even though this is in place we still do many dishes due to the amount of food we consume. -
Fernie Diop 3/05/2021 6:29 PMI've had brief interacts when I've gone to the grocery store where I've been able to help someone. Although the idea of helping someone has changed due to covid, I was still able to give recommendations and also receive help from fellow shoppers. -
Fernie Diop 1/06/2021 6:28 PMI spoke to my best friend and parents about how our society is still destroying our planet and we need to prioritize the urgency of focusing on restoring it by developing more sustainable practices and focus on pressing issues such as climate change.-
