After the first SUS class, I went to my doctor and received my results that my cholesterol was high. She spoke to me about trying a plant-based diet. It was then that the challenge came to mind and so I decided to search for a documentary. I came across “Forks over knives.”

This really hit home because I grew up in the islands, Grenada to be exact and we eat everything, including Iguanas and Possum. I recently visited and ate just that so no wonder why my cholesterol went up (smile).

By watching this film, I saw how people changed their lifestyle by learning more about reversing his health by being on a plant-based diet. The evidence was very compelling in the documentary. I do not want to take cholesterol pill, so I have already started by not eating meat. I am not sure how long it would last because my husband is constantly eating Publix fry chicken (laugh).
