Laura Arens 7/13/2020 10:37 PMFor my challenge of reducing my ecological footprint, I met with my roommate and we discussed our consumption, waste, and recyclables situation. We decided to switch to more eco-friendly cleaning products, such as plant-based sponges and reusable cleaning sprays. We also researched what can be recycled in our area. I took an online ecological footprint quiz (footprintcalculator.org) and it said if everyone lived like me we would need 1.9 earths :( sad. I will continue to evaluate my habits and try to find ways to lower my waste!-

Laura Arens 7/13/2020 10:21 PMI visited another farmer's market this weekend and was able to make homemade vegan meals that were locally sourced! I made a strawberry rhubarb jam that was super tasty. -

Laura Arens 7/07/2020 8:26 AMOn Sunday, I collected some recyclables from my neighbors and roommates to create my scrap garden. I used an old oat milk container, 2 plastic La Croix bottles, a Ben & Jerry's ice cream container, and a pasta box. I researched which items need to be propagated and which go directly in the dirt! It was fun & will hopefully be a very good way to save money in the future.-
Laura Arens 7/08/2020 8:49 AMYes! lettuce, celery, tomato, onions (green, yellow & red) and some rosemary. I also have ginger growing outside but that is supposed to take a long long time to sprout lol so I might not track it -

Laura Arens 7/07/2020 8:19 AMOn Saturday, I researched what foods grow best in a small scrap garden. I came up with ginger, tomatoes, green, yellow, and red onions, celery, and lettuce. My neighbors contributed some scraps of onion and tomato. To obtain what I didn't already have, I went to the farmers market to get the produce I needed to start my scrap garden. We participated in the Native American march and I met some new people in my roommate's tribe. It felt good to connect with my neighbors, the people at the farmers market, and some friends at the march. -
Laura Arens 7/06/2020 10:25 PMThis weekend, I tried to meet all of my sustainability goals. On Friday, I ordered a vegan meal from my favorite local Thai place. I wanted to support a small business while keeping my goal of entirely plant-based meals. My partner and I rode our bikes to get the food and we enjoyed nature as we ate! It was nice to connect with the community & nature.-

Laura Arens 6/30/2020 9:04 AMThis weekend I went grocery shopping and made sure to focus on buying organic and local products. I have wanted to work towards veganism for quite a while. I bought eggs and cheese still, but my eco-challenge I am focusing on is to eat 7 entirely plant-based meals this week. Yesterday, I made a lentil dish that was very good with no animal ingredients. I also biked to the store and attempted to find products that weren't sold in plastic. Hopefully, the grocery trip put me in a good position for the rest of the week.-
