    I was craving one of my favorite dishes from a food cart in Portland so I made my own version of it! It is called the Aloha Bowl from Namu. It has rice, yakisoba noodles, fried tofu, pineapple, spinach and avocado topped with sriracha and teriyaki sauce! I didn't think it would be so easy to make and really cheap! (and vegan of course)

    went to the local farmers market this weekend and bought some organic produce! I tried to buy stuff that i could use in the next few days. I got beets, spinach, tomato and cauliflower and tonight we are making cauliflower peanut sauce noodles!

    I adopted a dog last week and we are learning what ways we can be more sustainable in feeding her and the things that we buy. I bought some used fabric and made her a little sweater so that is a little more sustainable than going and buying a new one. Now we have to think about food. Do we want to buy regular food or try to feed her a whole food diet? That will definitely be harder and she is only 6 months old so I will have to do some research to decide. Heres a pic of her in her new sweater!

    This weekend was tough to eat vegan because I went out of town but I still managed to eat at least one vegan meal a day!

    Went on another cool hike today that I hadn't been on before! even though it was raining a little bit it felt good to get outside and explore.

    This weekend I am trying to go to the farmers market and get everything I need to make a local and organic meal! It will be nice to try to eat with the seasons and support small local businesses.

    I made a really good organic ramen last night that was a hit!
    (could be vegan without the egg but I can't resist a jammy egg)

    I went on a hike today through the woods in a spot I haven't been! There was no trail, but we just started walking because we were looking for mushrooms. We found chanterelles and black trumpets and are going to use them in your dinner tonight! Exploring a new area was fun and we made sure we didn't get lost by tracking where we went. It feels nice to forage for your food and I hope to do it more soon!

    After moving home last week, I realized that my mom uses a  lot of plastic bottles. She doesn't like to drink the water out of her sink, so I got us a water filter and am going to hook it up this week. She says buying the bottles is just easier for her, but hopefully I can get her to use a reusable bottle or something of the sort and that should be even easier.

    While moving this week, I had to go through all of my things and get rid of a bunch of stuff. I made countless trips to the thrift store to donate anything I could there, gave stuff away to my friends and even gave larger items away on facebook marketplace and buy nothing groups. It felt good to "recycle" most of my items rather than just throwing them away just to be sent to the landfill and never be used again.
